Kansas City food truck with wraps, bowls and salads opening spot in the Crossroads
Two years ago, newlywed Angela Maciel joined her husband on his food truck rounds.
“I said, ‘This is too fun. But there’s no food truck that caters to the healthy lifestyle,’ ” she said.
So she came up with a menu and brought in her daughter, Katie Brill, to help out on her new food truck, The Hungry Hatch.
Now the women are partnering in a location in Parlor food hall at 1707 Locust St. It is scheduled to open this week, possibly as early as Wednesday.
The menu will have mostly gluten-free options but also choices for such dietary plans as Keto, Paleo, Mediterranean, the Whole 30 Program, vegetarian and vegan.
Customers pick a wrap, salad or bowl (rice or quinoa), then they can select one of Hungry Hatch’s specially designed mix of toppings.
For example, the Asian has shredded chicken, spring mix, cabbage, carrots, cucumber and sesame seeds; the Atlantic comes with tuna, spring mix, tomatoes, cucumber and mozzarella cheese; and the Islander has grilled shrimp, spring mix, cabbage, carrots and bell pepper.
It will open in the former Sushi MO! spot. Sushi MO! opened in February and has since relocated to North Kansas City’s Iron District.
Maciel married Cristian Maciel, a partner in the Taste of Brazil food truck and City Market restaurant, in 2017.
