Johnson County bar and grill opening in former Mexican restaurant

A new restaurant opening in Olathe aims to satisfy three goals, according to Edward Collins.

“Cold beer, good service, quality food,” he said. “That’s the concept.”

He’s partnering with Kevin Gould, Natalie Bray Neal, and his wife, Beth Anne Collins, to open Beth’s Bar & Grill, a new concept opening in the former Chapala Mexican Restaurant at 1531 S. Hamilton Circle.

It’s named after Beth Anne.

They’re planning to open the concept in just a couple of months, at which time it will serve burgers and brews in a lively atmosphere.

The focal point of the space will be a yellow stone, horseshoe-shaped bar with a fireplace embedded in it. Edward produced an AI-generated image of his vision for the bar.

The food, however, will remain the main draw. The partners will serve up grass-fed, seven-day aged smash burgers cooked in beef tallow and served on brioche buns.

“We want … a burger that’s elevated beyond any burger in the city,” Edward said.

Chicken wings brined in salt and pickle juice, as well as salads, will also appear on the menu.

Both Edward and Beth Anne are former first responders. Edward is the retired KCFD battalion chief, and Beth Anne was a police officer in Fort Worth, Texas, then in Mission.

The couple want the space to honor police officers and firefighters with deals and specials, though they added it’s a space for community members of all walks of life.

The pair is also calling upon their previous experience at their former concept north of the river: Repeal 18th Bar & Bistro. (Its name is a reference to the 18th Amendment.) They had the cocktail bar and gastropub for a few years before selling it in 2022, saying the pandemic did a number on the business.

The couple also owns 321 Mattress.

But now they’re restarting their hospitality ventures with Beth’s, which the couple hope will become a touchpoint for the community.

“Everyone’s pretty excited about having a new place to go, and I’m hoping to give them that opportunity with the space,” Beth Anne said.

Chapala closed last year after 25 years of operations.
