Health restaurant chain opening first KC area spot in this Johnson County development

Pennsylvania-based health chain Saladworks is entering the Kansas City market this summer.

The restaurant — serving salads, wraps, sandwiches, grain bowls, paninis and soups — is opening a restaurant in Overland Park’s burgeoning Bluhawk development in July.

With one spot nailed down at 7745 W. 159th St., franchise owner Paresh Patel said he hopes to open more in the Kansas City area. He doesn’t have concrete plans for his second spot yet, but he’s looking forward to seeing the community’s reception to the concept.

Saladworks has been on the market since 1986. Today, it has dozens of locations across the country.

Customers can build their own salads and choose from more than 50 toppings. Some of the chain’s signature salads are the buffalo bleu salad (iceberg and romaine lettuce blend, grilled buffalo chicken, diced tomatoes, banana peppers, bleu cheese, tri-color tortilla strips) and the farmers market salad (supergreens lettuce blend, roasted turkey, roasted butternut squash, roasted Brussels sprouts, smoky bacon, red grapes, feta cheese).

In October, the first phase of a 420,000-square-foot sports complex opened, with ice rinks, volleyball courts, basketball courts and 40,000 square feet of turf.

The first phase of a new shopping center, called The Boundary at Bluhawk, was announced last year. It aims to include 200,000 square feet of retail and restaurant space, with a projected opening date of 2026.

Bluhawk is currently home to several retail and restaurant tenants, including Costa Vida, Of Course Kitchen & Co., and Cosentino’s Market.
