Inside the new Magic Noodle in Lee’s Summit, employees pull dough into long sections, then merge the edges into a wobbly ring.

They repeat the cycle — stretch and fold, stretch and fold — until the noodles are the customer’s desired thickness. The noodles are then boiled and added to soups and stir-fry dishes.

The restaurant, 1020 NW Pryor Road, is now the second place customers can find Magic Noodle’s made-to-order, hand-pulled noodles.

Owners Jack Yu and Elvin Liu expanded their business this month by opening another location in the new Streets of West Pryor development, where Iowa-based bar 30hop also opened recently.

The concept started in 2021 in south Overland Park’s Bluhawk development, 8013 W. 159th St.

A page inside the restaurant’s menu explains the history of Lanzhou Ramen. The dish, which originated in the Qing Dynasty (circa 1799), became a popular part of Chinese culture for its noodle-pulling technique. Today, hand-pulled noodles are popular in Asia and beyond.

At the restaurant, customers can choose from five different shapes of noodles, which are featured in dishes like the magic pork noodle soup, pork dumpling soup, shrimp stir-fried noodles and more.

Other dishes include scallion pancakes, squid, lamb skewers and beef gamo.

Magic Noodle is open 11 a.m. to 9:30 p.m. Mondays through Thursdays and 11 a.m. to 10:30 p.m. Fridays and Saturdays.

In August, the city of Lee’s Summit announced that Nick the Greek would open in the space next to Magic Noodle, though it has yet to open. A few months ago, Nick the Greek announced that its other two locations in the Kansas City area were temporarily closed for renovations.

Georgia-based chicken salad restaurant Chicken Salad Chick also recently opened in the development.
