Updates: Waldo’s ramen bar, Plaza’s Eddie V’s, expanded Plowboys BBQ set opening dates
Longtime restaurateurs Andy Lock and Domhnall Molloy have selected a name and opening date for their new Waldo ramen restaurant.
Bōru Ramen Bar is scheduled to open in mid-December at 500 W. 75th St., currently home to their Summit Grill & Bar Waldo. The partners had a successful run offering ramen nights at the restaurant earlier this year and decided to expand it to a full-time operation. Their culinary director Po Wang is creating the menu for Bōru.
Summit Grill & Bar Waldo will close in the 3,300-square-foot space and reopen in the 8,800-square-foot former 75th Street Brewery space, at 520 W. 75th St., in mid-November. It will have a private dining room seating up to 54 people and the restaurant is now taking reservations for the holiday season.
The 75th Street Brewery space is currently under renovation and the brewery equipment has been removed.
Lock and Molloy are hiring 30 people for Bōru and 15 more employees for the expanded Summit Grill & Bar Waldo.
They also own Summit Grill & Bar and Third Street Social in Lee’s Summit.
▪ Eddie V’s Prime Seafood plans an Oct. 24 opening at 700 W. 47th St., Suite 115 (former Ruth’s Chris Steak House space) by the Country Club Plaza.
Hours will be 5 to 10 p.m. Sunday through Thursday, and 5 to 11 p.m. Friday and Saturday. It also will have happy hour from 4 to 7 p.m. daily.
▪ Plowboys Barbeque hopes to open at 10:30 a.m. Oct. 20 in its new and much larger Town Pavilion space at 1111 Main St., Suite 120, and it will add dinner service on Nov. 3. It currently operates in Suite 115.
