More than a dozen new restaurants & shops opened in Lee’s Summit in 2025
For Lee’s Summit residents looking for new places to dine and shop, 2025 has been noteworthy with more than a dozen restaurants and numerous new retail establishments opening .
The City of Lee’s Summit — along with Downtown Lee’s Summit Main Street, the Lee’s Summit Chamber of Commerce and Economic Development Council — have partnered to create a desirable business environment, Mayor Bill Baird said.
“We have seen record levels of development and expect continued growth in alignment with our strategic and comprehensive plans in the near and long term,” he said. “Activity begets more activity, and as businesses choose to locate and invest in Lee’s Summit it certainly helps attract more businesses and more investment in the community.”
Costco development in the works
One of the most anticipated new retail businesses is still in the planning stages. A preliminary development, including a Costco store, was approved by the city’s Planning Commission on Nov. 13. The plan is on the Lee’s Summit City Council agenda Dec. 9.
“If Costco were approved, we could expect more restaurants, retail experiences, more options, more jobs, which all relate to more revenues to the city and helps fuel the quality of life within the community,” Baird said.
Costco is considered the blue-ribbon standard when it comes to both retail shopping and as an anchor store within a development, the mayor said, often bringing customers from as far as an hour away. The members-only store is also known for high-quality goods and services and as an employer that values its workers.
If approved by the city council, the 151,537-square-foot Costco would be located at the southeast quadrant of Missouri 291 and 50 Highway as part of the East Village development. The plan calls for apartments, dine-in and drive-thru restaurants, retail and townhomes.
Businesses that opened in Lee’s Summit in 2025
During 2025, a variety of Lee’s Summit stores and eateries opened, from bakeries to mini golf to ice cream shops.
New businesses in downtown Lee’s Summit include Vetta Italian Eatery, Hemlines Boutique, the Babe Standard permanent jewelry and custom hats, Fans Only Sports Cards, and EB and Co. jewelry. Opening soon in downtown are Smith Hat Co., Madison Social Charcuterie and Duck Donuts.
Three ice cream stores opened during the summer with Bruster’s Ice Cream and Cold Stone Creamery, both located at Summit Woods Crossing on Northwest Chipman Road. Howdy Homemade Ice Cream, 921 NE Woods Chapel Road, serves seven core flavors of ice cream along with rotating seasonal flavors. The store is also dedicated to creating jobs for people with intellectual and developmental disabilities in partnership with TNC Community nonprofit.
Lee’s Summit gained two new bakeries and a new tea and gift shop this year. The Paperback Bakery and SereniTea Boutique opened in a shared space at 500 SW Third Street early in 2025. Dough’pamine Queens bakery opened during the summer at 100 N. Tudor Road.
Other new restaurants in 2025 included:
- Nick the Greek and Chicken Salad Chick, both located on Northwest Pryor Road in the Streets of West Pryor Shopping Center
- A second Andy’s Frozen Custard at 630 NW Chipman Road
- Spice of Bombay Indian kitchen and bar at 436 SW Ward Road in Cedar Creek Mall
- Dave’s Hot Chicken at 1808 NW Chipman Road
- Popeyes Louisiana Kitchen, 440 NW Chipman Road in Summit Orchards
- Pho Noodle Co., 1720 NW Chipman Road in Summit Woods Crossing
- Ancho and Agave Mexican restaurant, 860A NW Blue Parkway in Summit Fair Shopping Center
Several recreation and kids’ play businesses launched this year including:
- TM Fieldhouse multi-sport indoor facility at 1550 SE Hamblen Road
- Summit Play Village indoor playground for children 8 and under at 3745 Raintree Drive
- Craft Putt, located at 840 NW Blue Parkway in Summit Fair and offering miniature golf, food and beverages
- Fairway Golf Club, an indoor golf facility, which is sharing space with Tom’s Travelers weddings and event catering at 908 NE Chipman Road
