Bakery specializing in Hawaiian treats plans new spot in Olathe

Mahalo Mornings, a Hawaiian-inspired bakery, announced Tuesday that it will open a new location in Olathe’s new downtown development.

Owner and founder Madison Moore said the new location is expected to have a soft opening in December 2026.

The new location will be the bakery’s first standalone brick-and-mortar location. They currently have pop-up locations at Lenexa and Mission farmers markets and a smaller location within the Lenexa City Center fitness center at 17450 W. 87th St. Parkway.

Mahalo Mornings offers Hawaiian-inspired pastries and baked goods. Moore said that she does her best to use local vendors for her ingredients and said her pineapple banana bread is a customer favorite. Other pastries include butter mochi, mango lime muffins, guava chantilly muffins, and more goods that use tropical-inspired ingredients.

Moore said she has always had a passion for baking and dreamed of opening her own space.

“I really wanted to open my own bakery and eatery one day, that’s always been my dream,” Moore said. “There was a lot for me to learn as far as running my own business. I’ve done a lot of learning, a lot of trial and error this past year.”

Moore is also business partners with her mom and dad, who helped her find the space for her new bakery.

“We found the place and I fell in love with it,” Moore said. “It’s a 150-year-old building. It’s all brick on the inside.”

She said that in addition to the pastries, the new location will also serve sandwiches, soups and other lunch items and will be open from 7 a.m. to 2 p.m.

Moore said she named the bakery “Mahalo Mornings” because Mahalo means “thankful” or “thank you” in Hawaiian and this is a message she wants to carry out through her business.

“Hawaii has a really special place in my heart,” Moore said. “I’m getting married there next year. I traveled there a few times, and I absolutely love it because it is beautiful but other than being beautiful, the people are amazing. Their sense of community and helping each other, you just feel a different type of vibe.”

Moore said that she wanted to bring this sense of community and family to her hometown of Olathe.

“It will be a place where you can bring your entire family,” Moore said. “You can meet new people, and you can make friends and try some foods and flavors that you may never have before.”

This project is a part of a new downtown development on the 100 block of Cherry Street, called County Square Commons, that will also be home to an Austin’s Bar and Grill, among other restaurants and shops.

The commercial real estate company spearheading the project is lane4property, and they say that infrastructure work is underway and the tenant build out is expected in August 2026.

According to Olathe City Council member LeEtta Felter, a portion of Chestnut Street may be affected by construction.
