Mexican chain with customizable burritos is coming to Blue Springs
This summer the Kansas City area is getting its fifth QDOBA Mexican Eats, a San Diego-based chain known for its customizable burritos and other Mexican cuisine staples.
A spokesperson for QDOBA on Wednesday confirmed the brand’s newest location will open in June at the Copperleaf Shopping Center in Blue Springs next to a Dutch Bros Coffee drive-thru. The address is 701 NW Highway 7.
QDOBA didn’t provide further information about an exact opening date, the layout of the space or the menu.
The fast-casual chain is comparable to other Mexican-inspired restaurant brands, like Chipotle and Moe’s Southwest Grill, that offer a customizable menu of burritos, bowls, quesadillas and tacos inside a counter-service eatery. QDOBA also serves breakfast until 10:30 a.m., with create-your-own breakfast burritos, bowls and quesadillas for food, and coffee and orange juice to drink.
Guests can also add chips to their orders with either salsa, guacamole, QDOBA’s signature three-cheese queso dip or its spicy version, the Queso Diablo.
QDOBA has nearly 850 locations across the U.S. Most locations in Missouri are located in the St. Louis area, and its stores are spread out around Kansas. The Kansas City area has locations at the Antioch Crossing shopping center, in Raymore, Fort Leavenworth and Overland Park.
The strip mall that QDOBA plans to move into was proposed by the property owner, Kavaso Investments, in 2024, according to documents from the Blue Springs Planning Commission. Dutch Bros was first to move in, and there’s still another storefront available, according to a map from retail real estate firm Ferguson Properties.
