Kansas City fast-casual restaurant opening another location. ‘Thrilled to grow’
Chicken Salad Chick — a fast-casual chicken salad restaurant concept that’s sweeping across the KC metro — will soon open another location.
The Liberty restaurant, 8311 N. Booth Ave., will open Tuesday at 10 a.m. The first guest in line at the restaurant will win one free large Quick Chick chicken salad a week for a year.
The next 99 guests in line at the restaurant will win one free large Quick Chick chicken salad a month for a year.
Owned by husband and wife Alan and Kendra Greenwood, the location will be the Kansas City area’s third. It has spots in Overland Park at 9222 Metcalf Ave. and in Lee’s Summit at 1020 NW Pryor Road. (The Greenwoods own the Lee’s Summit spot, while sisters Jo Anne Williams and Cindy Sulzman own the Overland Park one.)
“Alan and I are thrilled to grow our business portfolio with a second Chicken Salad Chick restaurant,” Kendra said in a press release. “After seeing the excitement and positive community impact from opening in Lee’s Summit, we knew we wanted to continue expanding.”
Since opening the first metro location last year, the Georgia-based chain has been offering scoops and sandwiches to Kansas Citians. It offers cheddar melt meals (chicken salad sandwich with cheddar cheese and bacon), BLTs, turkey clubs and more.
Its chicken salad scoop options include the Olivia’s Old South (sweet pickles and egg), Jalapeño Holly (with jalapeños), Nutty Nanna (with pecans and cashews), Barbie Q and more.
