Johnson County pasta restaurant closed. But soon it will become a coffee shop
A former Johnson County pasta restaurant will soon become a local drive-thru coffee shop.
Brew Haha Coffeehouse will open a second location at 13655 W. 63rd St. in Shawnee. The spot will take over the space most recently home to Simon’s Pasta.
Owner Jason Presley said he’s hoping to soft-open the drive-thru in January and have the entire space — with roughly 30 seats inside and additional 30 for its outside patio — ready for customers in the spring.
The new spot is a ways from his original Overland Park location at 10332 Mastin St., which doesn’t have a drive-thru. But Presley is looking forward to joining the space west of downtown, which he feels could use more options.
“It’s just an area that doesn’t have a whole lot around it as far as other local coffee shops,” he said. “It’s definitely an open market.”
At least at first, it won’t have the same full food menu as its full-service location. He’s planning on serving some grab-and-go options in addition to Brew Haha’s espresso and coffee menu.
Crêpes are a popular item at the Overland Park location.
While Presley said that the space along 63rd Street has been a “revolving door” of concepts, he thinks a drive-thru coffee shop is the best use of the space.
Before Simon’s Pasta, the space was home to Taco Hangover, a concept by the team behind Saints Pub + Patio.
Taco Hangover closed and rebranded the space to burger-centric Saints Express, which closed a few months later. The spot was originally home to Sheridan’s Frozen Custard.
It’s unclear exactly when Simon’s Pasta closed, but “closed” signs have been on its drive-thru and doors for over a month.
Closer to downtown Shawnee, a new coffee shop and roaster — Current State Coffee — is coming to 11217 Johnson Drive. It’s estimated to open in January.
