This Vietnamese restaurant is opening in a former Johnson County fast food spot

Beloved Kansas City restaurant Vietnam Cafe is taking over a former Johnson County fast food spot.

The Vietnamese restaurant, which operates at 522 Campbell St., is opening a second location in the former Overland Park Beef-A-Roo restaurant at 9500 W. 135th St.

Owner Minh Hoang told The Star he hopes to open by July of next year.

Hoang said the menu will be similar to his original location in Columbus Park, which serves pho, mi tuoi (egg noodle soup), several different stir fry dishes and more.

Illinois-based Beef-A-Roo closed the Overland Park spot last year after just two years. It was the only remaining location in the metro.

It has locations in Manhattan, Kansas; Springfield, Missouri, and beyond.

Before Beef-A-Roo occupied the location, it was home to Georgia-based chicken chain Zaxby’s.
