Kansas City vegan restaurant closed. Soon, a new bagel and breakfast spot will move in

After four years in Brookside, vegan restaurant Mattie’s Foods has closed.

The business, which shut down its brick and mortar at the end of 2024, is pivoting to catering and food truck operations (still bookable through its website). That left the 633 E. 63rd St. spot up for grabs.

Luke Salvatore — who owns Providence Pizzeria Co. with his brother, Aaron — had been looking for a permanent spot for his newest venture. He thought the former restaurant would make the perfect first location for Luca Bagel Co.

At least a few frequent flyers at the Overland Park Farmers’ Market are likely salivating by this point. His bagel sandwiches and flavored bagels with schmears are popular on Saturday mornings.

When his Jersey-style bagels first hit the farmers market in 2023, they began selling out quickly. “Like, almost inexplicably,” Salvatore told The Star at the time.

His plan with the new spot? Bagels and schmears, pastries and coffee. Plus, perhaps his biggest hit, bagel sandwiches.

The sandwich flavors he’s tested at the market so far include pastrami and Swiss with horseradish cream cheese; bacon, egg and cheese with pork roll; and bacon, egg and cheese with sriracha mayonnaise.

He aims to open the restaurant three to four months from now.

Luca Bagel will still be in the Overland Park Farmers Market, but Salvatore is excited to expand his customer base in the metro by finding a home on the Missouri side.

“I feel like there’s a good market in bagels in Brookside,” he said. “It’s a great neighborhood.”

He’s focusing on this location first, but another spot certainly isn’t out of the picture. It would be nice to have a more permanent spot for Luca Bagels near his Overland Park fan base.

“It would be nice to have one, maybe two locations,” he said. “We’ll just see where it goes.”

His other business, Providence, is at 415 Westport Road and 12925 S. U.S. Highway 71 in Grandview.
