Johnson County Cajun restaurant closed months ago. Here’s what will soon replace it

Mexican restaurant Don Chuy’s Fresh Mex and Cantina will soon open a location in Overland Park.

Don Chuy’s will take over the old KC Daiquiri Shop Bistreaux at 8725 Metcalf Ave., according to the restaurant’s Facebook.

Don Chuy’s original spot is in Knoxville, Tennessee. It opened its second restaurant in Lee’s Summit at 701 S.E. Melody Lane, offering margaritas, burrito fajitas and other Mexican dishes.

Bistreaux — a Cajun and Creole restaurant started by the owners of KC Daiquiri Shop downtown — closed in the Johnson County space in October.

“We had a good run in OP and gave the community something they had never seen before. But unfortunately all good things must come to an end,” co-owner Kinley Strickland said at the time.

Strickland said he had considered pivoting to a smaller concept within the space but ultimately decided to close. It had been open since June 2021.

KC Daiquiri Shop at 1116 Grand Blvd. remains open. Its menu is slightly different from Bistreaux’s, consisting of wings, fried shrimp and colorful daiquiris.
