Utah’s Crumbl Cookies came to the market earlier this year, opening two Johnson County locations that frequently have customers lining up.

Now it is opening a Lee’s Summit location in SummitWoods Crossing, 1736 N.W. Chipman Road (near Target), at 8 a.m. Thursday.

The shops offer a choice of six fresh-baked cookies.

One is standard — milk chocolate chip. The other five choices rotate from a menu of more than 140 flavors, including confetti cake, chocolate with Andes Mint and dusted with Oreo crumbles, sea salt toffee, hazelnut churro, peanut butter chocolate and raspberry cheesecake.

The stores, which are known for their pink boxes, also offer curbside pickup and delivery, and they cater events with mini cookies and full size cookies.

The Lee’s Summit franchisees also have the Olathe and Overland Park shops, and two in Wichita. They have locations under construction at 8420 N. Church Road near Liberty, as well as in Topeka, both scheduled to open in late March. They plan to have nine metro locations in two years.

Hours for the Lee’s Summit shop will be 8 a.m. to 10 p.m. Mondays through Thursdays, and 8 a.m. to midnight Fridays and Saturdays. It is closed Sundays.

Another area franchisee plans to open a shop in Ward Parkway Center, next to Trader Joe’s, in early 2022. Blue Springs and Gladstone also are scheduled to get Crumbl Cookies shops.
