Mexican restaurant chain expanding quickly: New locations for Kansas City, Blue Springs

Locally owned La Fuente restaurant chain is expanding again with new locations planned for Blue Springs and the Liberty area.

It plans to open a La Fuente Mexican Street Food, a fast casual operation, at 1512 N.W. Woods Chapel Road in early September.

The menu will include street tacos, steak nachos, burritos, taco salad, tortas, burrito bowls, sopecitos and quesadillas.

It also plans to put up a new building for a full-service La Fuente Mexican Restaurant on Missouri 291 near Liberty for an early 2022 opening. It will offer a more expansive menu than the fast casual street food operation.

The first La Fuente Mexican Street Food location opened in Overland Park in early 2020, and it has since added locations in the Legends Outlets Kansas City in Kansas City, Kansas, and in Crown Center.

“I have a good relationship with the banks now, I’m getting loans. And the customers really like it,” said Eduardo Garcia, owner.

His Kearney-based company has a handful of full-service La Fuente Mexican Restaurants in the metro as well.
