Pancakes in a bowl? IHOP’s new fast-casual concept may come to Kansas City region

IHOP may soon be bringing its new fast-casual concept to Lawrence.

Flip’d by IHOP is scheduled to open in New York City this summer. It also is “exploring” Lawrence, as well as two cities in Ohio — Columbus and Dublin — for locations that could open later this year.

The concept will offer dine-in service but will emphasize to-go and delivery to “meet the demand for made-to-order breakfast, lunch and dinner that is convenient and fresh, all at a great value,” the chain said in a statement.

IHOP originally planned to target large metropolitan areas but now also is looking at suburban markets and non-traditional venues.

“While we know there is a pent-up demand for a return to dining in restaurants, we anticipate that our delivery and takeout business is here to stay as consumer needs continue to shift and they seek out different ways to experience IHOP favorites,” said Jay Johns, president of IHOP, in a statement. “With Flip’d, we can provide that on-the-go fast casual experience.”

Flip’d will feature an all-day menu with “reimagined” breakfast classics such as pancake bowls and egg sandwiches, and “PM-centric” options including Black Angus steakburgers, buttermilk crispy chicken or grilled chicken breast sandwiches, and grab-and-go salads and wraps.

Customers will enter the operation and order from a digital kiosk or at the counter. They also can order online in advance and pick up from a designated area for carryout, or have their meals delivered.
