New Johnson County Mexican eatery will offer tostadas, juices and gourmet popsicles

Graciano Arturo Martinez has long liked to whip up Mexican dishes for his family and friends. He dreamed of having a restaurant one day.

“I like to serve people, to see them enjoy what they are eating and the different flavors,” he said.

He works in sales at Univision, but after his wife opened a shop, Giselle’s Bridal KC, in Overland Park’s Oak Park Mall he started making plans for his restaurant.

He teamed up with Queny Olivera on Acapulco Paradise, which is scheduled to open in mid-September on the upper floor of the mall near the food court.

The menu will include tostadas, sandwiches, tamales, Mexican bread, donuts and pineapple filled with fruit cocktail, chamoy sauce, tajin and tamarindo.

It will have a juice bar serving such drinks as Jugo Vida Verde (cactus, parsley, celery, pineapple, ginger and cucumber), and Jugo Acapulco (papaya, pineapple, mango, banana, carrot and beet).

It also will have artisan ice cream in cups or cones, sundaes, waffle bowls, banana splits, shaved ice with chunks of fresh fruit, fruit sorbet with fresh fruit, gourmet popsicles, agua frescas and Mexican candies.

Customers can take items to-go or dine in the food court of the shopping center at 95th street and Quivira Road.
