New Westport complex is ‘finally’ opening with bar, giant biscuit sandwiches, pizza
A banner over Westport’s new Atomic Cowboy broadcasts a grand opening in 2019. But now the “19” has been crossed out for “20” with the word “Finally!” added.
It’s been a three-year process for founder Drew Shader, who saw the potential in the old City Ice Building, circa 1911, when he was scouting area sites.
He took it down to its original stone facade, and opened up the 8,600 square foot space for a bar and dining room with soaring ceilings and new windows for natural light.
But delays in construction pushed the opening back to earlier this year.
“Then the world stopped,” Shader said.
He has four locations in the Denver area that have been doing well with carry-out during the pandemic. He sent his six-member Kansas City management staff to train there for the three months that they would have spent opening the Kansas City location, making them his most seasoned opening staff ever. The Kansas City complex will have about 100 employees.
Three of the concepts are scheduled to open Tuesday at 4144 Pennsylvania Ave.: Atomic Cowboy, Denver Biscuit Co. and Fat Sully’s. The fourth, Frozen Gold soft-serve ice cream, will open in mid- to late August.
The four operations under one roof will take consumers from breakfast to late night.
▪ Atomic Cowboy is the bar serving specialty cocktails, craft beers and wine from 7 a.m. to 10 p.m. Sunday through Thursday, and from 7 a.m. to midnight Friday and Saturday.
▪ Denver Biscuit Co. will serve Southern-style gourmet biscuit sandwiches and biscuit entrees made with towering house-made biscuits that are prepared every 20 minutes (watch them being made at a walk-up window). Hours will be from 7 a.m. to 2 p.m. Monday through Friday, and from 7 a.m. to 3 p.m. on Saturday and Sunday.
▪ Fat Sully’s will offer hand-tossed New York-style pizza with freshly prepared dough, single-source Mozzarella cheese, New Jersey tomatoes, and fresh topping for single slices or pies. Hours will be 11 a.m. to 10 p.m. Sunday through Wednesday, and 11 a.m. to midnight Thursday through Saturday.
▪ Frozen Gold will have soft-serve ice cream with a variety of toppings, including Oreo crumbs, chocolate chip cookie dough, salted potato sticks, candied Rice Krispies and Cheetos. Hours will be from 11:30 a.m. to 9 p.m. Sunday through Thursday, and 11:30 a.m. to 10 p.m. Friday and Saturday. It will have a walk-up window.
Seating is on multiple levels — making it easier for social distancing — as well as on the covered patio. The patio will be enclosed in the winter.
It is the company’s second location to include all four concepts under one roof. Art work includes a neon cowgirl along the back wall, and a bright red neon arrowhead over the recreated ice house logo.
