Las Vegas-based chain specializing in slow-roasted turkey subs opening soon in JoCo

Las Vegas-based Capriotti’s Sandwich Shop is entering the market with a new Overland Park restaurant.

It plans a late June or early July opening at 11902 W. 119th St., just west of Quivira Road in the Stoll Park Center.

Area franchisees Dean and Carol Doria said they also are in negotiations to open in Lenexa City Center’s restaurant row and will then look at other areas for a third location. They plan to open the shops a year apart and said the metro could support even more locations.

“It is different than some other sandwich shops. It’s like a neighborhood little deli where everything is made fresh,” said Dean Doria, who had worked in the casino industry in Las Vegas and served in the U.S. Air Force. “We’re just really excited to bring the brand to Kansas City.”

Capriotti’s slow roasts its whole, all-natural turkeys in-house overnight and then hand-shreds them each morning for a variety of specialty subs.

Its top seller is The Bobbie (with turkey, cranberry sauce, stuffing and mayonnaise on a soft roll). It also has hot pastrami and Wagyu roast beef subs (both with Russian dressing and coleslaw), cheesesteaks, house-made meatball subs, vegetarian subs and salads.

The company was founded in Delaware in 1976 and now has more than 100 locations across the country.

In July, Capriotti’s announced it had signed development deals with more than a dozen franchisees in several markets.

Irina’s Gourmet Bakery had previously operated in the Stoll Park Center space. The owner said her lease was up and closed in January. She is in negotiations for a new spot.
