Since co-founding Grinders in the Crossroads in 2004, Jeff "Stretch" Rumaner has added several locations.
There's Grinders West next to the original location, Grinders Stonewall in Lenexa, Grinders High Noon in Leavenworth and Grinders LFK (which he says stands for Lawrence Fun Kansas) in Lawrence, scheduled to open in June.
But soon Grinders won't be confined to city limits. Rumaner has purchased the former Cheesy Pops' Pizza food truck and plans to change the graphics and roll out it as a Grinders truck by First Friday, June 1. It will set up at First Fridays and other Crossroads events, private events and more.
"Anywhere you can roll," he said. "People want it. You can't always get to Grinders. We thought it would expedite the situation."
The food truck will have a limited menu of pizza, Philly cheesesteaks and maybe even barbecue.
Grinders also is now franchising and would like the first few locations to open within the region — Omaha and Lincoln in Nebraska, Manhattan, Kan., St. Joseph, Mo., Tulsa, Okla., and then nationwide.
Grinders has gained a national following through Stretch's appearances on the Food Network.
