Owners of Plowboys BBQ are opening new non-barbecue concept downtown

In early 2015, Blue Springs-based Plowboys Barbeque expanded with a lunch-only operation in downtown Kansas City’s Town Pavilion.

Less than two years later they moved from the north corner to a much larger space on the south corner and added dinner service.

But the owners, Todd Johns and Todd Johnson, also had their eye on another Town Pavilion space. Now they plan to open Chik-N-Pie in the spot at 1111 Main St., Suite 155, on Wednesday, June 21. It was formerly another pizza and chicken place, Pizza Hut/KFC Express.

Chik-N-Pie will open at 6:30 a.m. weekdays serving breakfast sandwiches, pizzas and wraps, pastries from the Kansas City Baking Co., and biscuits-and-gravy. Then from 10:30 a.m. to 5:30 p.m. it will serve pizzas including personal-sized pizza, burgers and fries, chicken breast sandwiches, tempura-battered tenders and wings.

“It was an opportunity to service more of the business lunch crowd with a different menu and at different lunch budgets,” said Johns. “And it was easier to start a second restaurant in the same building with the existing clientele. A lot of them are eating at Plowboys once or twice a week now.”

In other Town Pavilion updates:

▪ Johnny C’s Deli & Pasta is taking the former Plowboy’s space at 1111 Main St., Suite 115, for a mid-July opening. Its original location opened at 7012 Universal Ave. in 1992 and then it added a location in Kansas City, Kan., in 2000. Owners Johnny and Sandra Caracci specialize in house-made Italian dishes, serving pastas, Italian sandwiches and salads in a fast-casual setting.

▪ A previously announced tenant, Ruby Jean’s Juicery, is scheduled to open July 22 in Suite 165. It specializes in health-focused smoothies, juices, performance shakes and grab-and-go snacks. Ruby Jean’s also has a 4001 Broadway location.

The Town Pavilion’s retail spaces are now fully leased.
