Easy Mexican Wedding Cookies perfect for cookie exchanges, parties
Mexican Wedding Cookies (also called Mexican Wedding Cakes) make a great addition to your holiday cookie lineup. They are quick to throw together, light as air when baked and uncommonly addictive. Because you can get so many on a cookie sheet, they are a good choice for a cookie exchange or other occasion when you are doubling the recipe.
Mexican Wedding Cookies
Makes about 3 dozen
1 cup butter
1/2 cup sugar
2 teaspoons vanilla
2 teaspoons water
2 cups flour
1 cup chopped pecans
1/2 cup confectioners sugar
Preheat oven to 325 degrees.
Cream butter and sugar. Stir in vanilla and water. Add flour and nuts, mix well.
Roll into ping pong-size balls in your palms and place on ungreased cookie sheet.
Bake 18-20 minutes. Cool, then dust with confectioners sugar.
