Chiefs guard Trey Smith’s go-to barbecue entree is hardly traditional KC fare

The Kelce brothers like to eat.

I don’t believe that is going to shock anyone, nor will it upset Chiefs tight end Travis Kelce or his brother Jason, the former Philadelphia Eagles center.

So when Chiefs guard Trey Smith joined the New Heights podcast last week, it was no surprise the conversation turned to barbecue. Smith’s choice of barbecue, however, was revealing.

Travis Kelce asked Smith to name his perfect barbecue plate. Smith didn’t hesitate when he mentioned one of KC’s most famous restaurants: Jack Stack.

Smith goes for the ribs. But not the beef back ribs or even the massive Crown Prime beef ribs.

Smith likes something less traditional than KC barbecue fans may expect.

“Ideal plate is gonna come from Jack Stack. Lamb ribs,” Smith said. “Man, I don’t know why, but they have the best lamb ribs.”

Jason Kelce was intrigued and asked if lamb ribs were different than lamb chops.

“It’s just the rib part of the lamb,” Smith said. “They do a dry-rub seasoning on it. But like, super tender.”

Travis Kelce wanted to hear how Smith would fill out that plate.

“So I’m gonna do lamb from KC and burnt ends, so two from there, right?” said Smith, who grew up in Tennessee. “I’m also going to show a ton of love to Texas. I want half a pound of brisket at least. I want a little piece of beef. And then finally, close it out for Memphis. That’s where I would do my pork. So pork ribs, pulled pork, eating like a barbecue chicken.”

Travis Kelce kept up his inquisition: What sides would Smith add?

“I gotta have mac and cheese. Baked beans. Give me slaw,” Smith said.

And finally, how about dessert?

“Peach cobbler,” Smith said, “or banana pudding for dessert.”

I’m not sure if Smith, who is 6-6 and 321 pounds, is the kind of guy who asks for a to-go bag, but that’s a lot of food.
