New KC-area brunch restaurant opens. It makes ‘the best pancake’
Claiming your pancakes are the best — in the world of brunch restaurants, especially — is a lofty assertion.
But Urban Egg has the accolades to back it up. In 2020, Reader’s Digest declared its cinnamon swirl pancakes were the best in Colorado (its home state). Founder Randy Price, a Kansas City native, believes they’re some of the best in Missouri, too.
“The texture’s gonna be a little bit crispier on the outside, a little fluffier on the inside,” Price said inside his restaurant Friday, as a plate with a pancake coated in cream cheese frosting slid across the table. “We spent months developing our recipe.”
On Friday, Price opened his new restaurant in Liberty at 8653 NE 85th St., which is his second in the metro. Across all his restaurants, though, it’s lucky No. 13.
While the restaurant began in Colorado in 2012, he opened his first KC-area spot in Overland Park in 2022 at 4921 W. 119th St.
At the time, it was a homecoming for Price, who grew up in Overland Park and graduated from Shawnee Mission South High School. Just out of college, he managed Houston’s on the Plaza.
Now he’s ready to make Urban Egg a KC staple.
“To see us expanding in the Kansas City market, I think it’ll be great for Kansas City, and great for Urban Egg,” he told The Star.
The menu boasts of sweet and savory options: eggs Benedict, breakfast tacos, Belgian waffles and more.
At the opening, staff highlighted the biscuits and gravy ($14.90), Dubai chocolate scone, and the billion dollar bourbon bacon ($9.90). A selection of breakfast cocktails, juices, and coffee are also available.
“We’re real serious about hospitality,” Price said. “Real serious about attention to detail and food.”
To provide a Kansas City touch, The Roasterie provides the coffee for Urban Egg, and Farm to Market Bread Co. provides the bread.
“We do as much local sourcing as possible,” Price said.
By the end of the year, Urban Egg will have three restaurants in the metro. The restaurant is currently working on another spot in the Lenexa City Center area. But Price doesn’t want to stop there.
“We would love to see Kansas City as a five- to six-restaurant market for us,” he said.
That said, Price is glad the second area location is in the Northland. He sees Liberty as an area of opportunity.
“(Liberty is) such an amazing area that I think can easily get overlooked,” Price said. “I really felt like it was a great fit for the elevated breakfast brand Urban Egg and feel like it’s gonna be a great addition to the neighborhood.”
Urban Egg is open from 7 a.m. to 2 p.m. Mondays through Fridays, and 7 a.m. to 2:30 p.m. Saturdays and Sundays.
