Mexican restaurant expanding in Midwest has opened a new Kansas City area location

Abelardo’s Mexican Fresh has arrived in Waldo.

The restaurant opened Friday at 420 W. 85th St.

It is one of several Abelardo’s in the Kansas City metro. Other locations are in Blue Springs, Independence, Lee’s Summit, Overland Park, Shawnee and Olathe.

The menu features burritos, enchiladas, tortas, taquitos and more. Abelardo’s also serves 12 combination plates served with rice and beans — a taco and tostada plate is $12.49 and a chile rellenos plate is $13.

Meat options include adobada, cabeza, lengua and tripe, in addition to carne asada, carnitas, chicken and ground beef.

Breakfast is served all day. A chorizo egg breakfast burrito is $11.49; huevos rancheros served with rice and beans is $10.49.

A Tuesday special offers five tacos for $6.99.

Abelardo’s was founded in Omaha in 2022 and has grown to include more than 50 locations in Nebraska, Iowa, Oklahoma, Illinois, Missouri and Kansas.

The building in Waldo was previously home to Strip’s Chicken, which closed in May amid the owner’s complaints about crime in the area.
