Kansas City area restaurant closes after 8 years, blaming rising costs and inflation

Los Cabos Mexican Grill & Cantina has closed its Independence restaurant.

A sign posted to the door Monday attributed the closing to “inflation and continued rising cost of goods.”

The final day of service at 18201 Bass Pro Drive was Sunday, the sign added.

Los Cabos was founded in Oklahoma in 2005. The chain serves Mexican food in a festive, resort-style atmosphere.

Owner Jim Blacketer, who had once opened a Steak and Ale at 79th Street and State Line Road in the early 1970s, brought the concept to The Falls development in Independence in 2016. The 13,000-square foot property neighbored other attractions in the development such as Bass Pro Shops, Stoney Creek Hotel and Duluth Trading Co.

“We prepare it all day, every day. Nothing is frozen,” Blacketer told The Star of the food in 2016. “It’s a split Tex-Mex/Sonoran menu, which is West Coast, Arizona cooking. And we add what I call coastal, which is our shrimp dishes, tilapia, mahi mahi.”

Three other Los Cabos locations remain open in Oklahoma.
