Chicken salad chain bringing 5 restaurants to the Kansas City area, 3 in Johnson County
Georgia-based Chicken Salad Chick is looking to bring five restaurants to the Kansas City area, the company has announced.
The restaurant chain — serving chicken salad scoops, sandwiches and soups — wants to open three locations in Johnson County, one in Lee’s Summit and one in Blue Springs.
Sisters Jo Anne Williams and Cindy Sulzman, franchisees of the Johnson County stores, are planning locations around Lenexa, Prairie Village, Overland Park and Leawood.
Williams said she and her sister fell in love with the chain after trying it in Destin, Florida.
“It’s always so fresh and just different than what you may typically find with burgers and fried chicken,” she said. “It just seems to fit.”
Her husband, Kirk, is a minority partner in Legacy Restaurant Group, a local franchise group that has dozens of Wendy’s locations locally. He’ll be the operating partner for the sisters’ franchises.
They’re looking to open their first location at the beginning of 2025 and have all three locations open by 2027.
The sisters don’t have any leases signed yet, but tenant representative Sheryl Vickers of Select Sites said they hope to in a month.
Chicken Salad Chick has had its sights set on the Kansas City area for at least three years. In 2021, it announced it would open a Lee’s Summit location the following year.
Those plans were delayed — until now. Drake Development announced Friday that Chicken Salad Chick would open a location in the burgeoning Streets of West Pryor development at 1020 N.W. Pryor Road.
A prospective opening date for that location was not immediately available Monday morning. Details on the Blue Springs location have also not been announced.
Some options on Chicken Salad Chick’s menu: Olivia’s Old South (chicken salad with sweet pickles and egg salad), Kickin’ Kay Lynne (chicken salad with buffalo sauce, Sriracha, ranch, bacon, shredded cheddar and jalapenos), and a chicken salad BLT.
Its Missouri locations include restaurants in Columbia and Springfield. The chain does not currently have any locations in Kansas.
