One steakhouse is closing, but another will open soon at this Kansas City venue

Gamblers at Ameristar Casino will soon have a new steakhouse to patronize between rounds at the blackjack tables.

KC Chop House will open in mid-November in the space formerly occupied by the Great Plains Cattle Co.

Alongside seafood dishes, the restaurant will serve a variety of steak cuts, including a 40-ounce Long Bone Ribeye, served with homemade steak sauce, truffle fries, and chimichurri and bearnaise on the side. Among the other menu options are the KC Chop House Burger (local wagyu beef, black truffle cheese, fried onions and bacon jam), prime rib (slow roasted and topped with horseradish and velvet au jus).

Chef Crystal Morris will lead the culinary program. She was previously the executive chef at Capital Grille in Minneapolis and Eddie V’s and Ocean Prime in Kansas City.

“With its embrace of midwestern roots, yet modern appeal, we are confident our guests will enjoy all that KC Chop House has to offer, including our featured prime, dry-aged and Angus beef sourced from local and regional farms, as well as a wide variety of hand-selected wines,” Ameristar general manager Keith W. Henson said in a written press release.

The cocktail menu features a tableside cherry wood-smoked Manhattan and The Dirty Pig, a bacon-infused vodka martini with pimento-stuffed olives and a bacon-dusted rim. Wine served by the glass will be available in 3-, 6- and 9-ounce pours.

The restaurant can accommodate 200 guests between its dining room and patio, plus another 50 in a private party space called the Prohibition Room.

A ribbon cutting ceremony for KC Chop House will be held Wednesday, Nov. 15, from 2:45 p.m. to 4 p.m.

The Great Plains Cattle Co. is currently operating inside Sugo, a breakfast restaurant at Ameristar, but will close permanently once KC Chop House opens.

Hours at KC Chop House will be 5 to 10 p.m. Wednesdays and Thursdays, and 5 to 11 p.m. on Fridays and Saturdays.
