New Johnson County breakfast spot: Cinnamon roll biscuits, huevos rancheros, skillets

Since they opened The Breakfast Spot in Leawood five years ago, Luis and Jennifer Ornelas have watched their dining room grow more crowded.

And while the restaurant at 13164 State Line Road offers lunch options, breakfast dishes in the “con huevos” section (meaning: “with eggs”) have remained most popular breakfast fajitas con huevos, huevos rancheros and chorizo con huevos, cinnamon roll biscuits to name a few.

So when the couple could open a second restaurant at 8881 W. 75th St. in Overland Park, they decided to solely focus on breakfast there.

The new spot will be called Con Huevos, like the menu option at their original restaurant. Con Huevos will be in the Antioch 75 Shopping Center, in the space formerly occupied by Jade Bowl Chinese.

“We’ll do skillets … pancakes, French toast, chilaquiles, which is one of our biggest sellers at our current spot,” Luis Ornelas said. “We’ll have a good variety of meat and toppings on it.”

The chilaquiles come with fried corn tortilla chips, salsa, cheese, bacon and eggs.

Luis Ornelas said Con Huevos is still at least two months from opening. It will carry all of The Breakfast Spot’s breakfast foods, but he isn’t planning on employing servers at his new space.

He said he’s testing counter service-only for a few reasons: About half of his business is generated by delivery services like DoorDash and Uber Eats. Plus, he added, finding reliable servers has been a constant struggle.

The new space will also be smaller than his Leawood cafe. Con Huevos will have six or seven tables inside for customers who want to linger.

He credited his loyal customers for helping him jump-start his second location.

“We have people, customers that are repeating, and even during COVID they placed to-go orders,” he said.”We just want to thank everybody for their continued support and making this happen.”
