The ‘Jimmy John’s of burritos’ is about to open its first Johnson County location

Champion Burritos’ format might remind some of other made-to-order restaurants.

There, customers can opt to build their own meal — Irvin Aguirre called it the “Jimmy John’s of burritos.”

Now the restaurant, owned by Aguirre’s father and run with help from other family members, is readying to open its fourth location in an old Subway restaurant at 16322 W. 65th St. in the Shawnee Station shopping center.

The family hopes to open it by the end of the month.

Customers munch on tacos, quesadillas and tortas in house or on the go. Menu items include the steak and egg breakfast burrito, fajita quesadilla and carne asada burrito.

The restaurant first began selling its specialty burritos in the Snappy Store convenience store near Armour Road in 2011. The Aguirres later opened their Parkville location at 7416 N.W. River Park Drive.

It also has locations in North Kansas City at 2028 Swift St. and in Gladstone at 7217 N. Oak Trafficway.

This will be Champion Burritos’ first location in Kansas.

“It’s in a great neighborhood, and it opens up a lot of business,” Aguirre said.
