Country Club Plaza’s Republica is changing concepts
Less than a year after opening on the Country Club Plaza, Spanish-themed restaurant Republica (pronounced re-poob’-lee-kah) will change concepts.
On Wednesday, the company said it will shut down the restaurant at the end of business on May 28 and reopen under a new name and new concept in mid-June.
Republica, at 4807 Jefferson St., is the sixth restaurant concept created by Bread & Butter Concepts. It offers a “contemporary take on spirited Spanish cuisine.”
In a statement, chief executive officer and founder Alan Gaylin said “overall, it did not meet the company’s business goals.”
Republica will be replaced by an American tavern concept called The Oliver.
The Oliver will offer “time-honored classic cuisine” using fresh ingredients with a twist. So instead of a typical French Dip, customers can order a Signature Smoked Pork Shoulder Dip.
Each entree will come with a choice of more than a dozen side options. It also will have house-bottled cocktails, local craft beers and classic libations.
The Oliver will be open daily for lunch and dinner and will have free valet parking for the first month it is open.
Happy Hour will be available from 3 to 6 p.m. Monday through Friday.
Bread & Butter Concepts has such local operations as BRGR Kitchen + Bar, Gram & Dun, Taco Republic, Taco Republic Truck and Urban Table.
Its Stock Hill Kansas City Steakhouse is taking a 14,000-square-foot space in the former Board of Trade building at 4800 Main St. for a November opening.
It also previously announced that it would open another concept, G. Berto Cucina, in Westwood in late 2015. But then the opening was pushed back to late summer 2016 and company officials have not provided an update on that location.
