New owners for three Ingredient restaurants

Locally owned Bread & Butter Concepts has acquired three Ingredient restaurants and will re-brand them as Ingredient True Eatery.

The locations are in downtown Kansas City, Leawood’s Park Place, and Columbia, Mo. The purchase price was not disclosed.

Ingredient locations on the Country Club Plaza and in Lawrence and Omaha are under different ownership groups. Ingredient was founded in 2007 in Lawrence.

“It has a pretty good reputation and is a pretty good brand but it needs consistency. There have been different ownership groups over time,” said Alan Gaylin, founder and chief executive officer of Bread & Butter Concepts.

Gaylin wanted to add a fast-casual concept to Bread & Butter’s portfolio. The sector is the fastest growing segment of the restaurant industry.

The Leawood Ingredient, at 11563 Ash St., temporarily closed for a couple of days to freshen the decor and reopened Tuesday under the new name and new menu.

The downtown location, at 1111 Main St., will close for a couple of days in February and then reopen under the new brand. The Columbia restaurant is scheduled to temporarily close on Jan. 18 and 19 and reopen under the new brand on Jan. 20.

Ingredient True Eatery will offer “culinary-driven fare in a fast-casual environment.”

Snacks will include french onion dip with house-made chips, hummus of the day, and Drunken Meatballs (pork, bacon, whiskey glaze and jalapeno cornbread).

Sandwiches will include the CB & Rye (corned beef, caramelized cabbage and onion, Swiss cheese, and Russian dressing on marble rye) and the Dagwood (roasted turkey, ham, Gouda and Swiss cheese, Bibb lettuce, tomato, red onions, and garlic aioli on ciabatta).

Salads will include crispy chicken (mixed greens, romaine, cheddar and jack cheese, black bean relish, bacon, spicy pecans, and chipotle peppercorn ranch) and Brussels Sprouts Caesar (romaine hearts, roasted garlic, Parmesan, and creamy Caesar dressing), or build-your-own from a variety of ingredients.

Plates: Pibil tacos, turkey lasagna, fish and chips, Teriyaki rice bowl, house-made chicken tenders and Atlantic salmon.

Other menu items include soups, a variety of flat bread pizzas, as well as specialty burgers, build-your-own burgers, veggie burgers and turkey burgers.

Bread & Butter Concepts also owns BRGR Kitchen + Bar, Urban Table, Taco Republic, Taco Republic Truck, and Gram & Dun. Its G. Berto Cucina is scheduled to open this fall in Westwood.
