Jersey Mike’s Subs opening in Lee’s Summit

An area franchisee for Jersey Mike’s Subs plans to open a Lee’s Summit location on Wednesday.

Michael Spiegel is owner of the new restaurant in Summit Fair, 940B N.W. Blue Parkway. Hours will be 10 a.m. to 9 p.m. daily.

Jersey Mike’s Subs, a fast-casual sub sandwich chain, was founded in 1956 and now has more than 1,000 restaurants across the country with another 500 in development. In June, Nation’s Restaurant News named it the fastest growing chain in the country.

The New Jersey-based company said it uses freshly baked bread, fresh ingredients and tops off its subs with a “zing of the juice” — blended red wine vinegar and olive oil. Menu items include hot sandwiches such as its chipotle chicken cheesesteak, along with cold sandwiches, wraps and salads.

Spiegel also owns a Jersey Mike’s Subs at 15018 S. Blackbob Road in Olathe.
