JoyceKC: Slim Chickens opens in Independence

The first area Slim Chickens is now open in Independence.

The restaurant is at 4641 S. Cochise Court, just south of Interstate 70 at Missouri 291. Six more area locations are planned, including one at 8901 W. 135th St. in Overland Park set to open in late spring or early summer 2015.

Slim Chickens, Fayetteville, Ark., was founded in 2003 and now has more than a dozen restaurants. It expects to have more than 600 open in 10 years.

It uses fresh ingredients for such items as chicken and waffles, smokey cheddar wraps, Buffalo Blues Salad (with blue cheese crumbles and grilled or fried tenders shaken in buffalo wing sauce), wings, and sides like mac-and-cheese, coleslaw, fried pickles, fried okra and fried mushrooms.
