Minsky’s Pizza and Eggtc. are opening a combo restaurant by the Country Club Plaza

The locally owned Minsky’s Pizza and Eggtc. will combine in a new operation by the Country Club Plaza.

Night & Day Gourmet — a Minsky’s & Eggtc. Joynt plans to open Tuesday in the city-owned Plaza Tennis Center at 4747 J.C. Nichols Parkway. It seats 22 people inside and 50 on the patio.

The menu will include favorites from both concepts: fresh fruit smoothies, breakfast burritos, bagels with cream cheese, hummus with pita or cucumber slices, entree salads, sandwiches and pizza (including Minsky’s Prime Cut and Nature’s Choice vegetarian pizza), as well as desserts like Luigi’s Real Italian Ice, ice cream bars and chocolate chip cookies.

“It should be fun. Something new we haven’t tried before and by the Plaza,” said Kenneth Kantner, a partner in Minsky’s. “If somebody wants something fast and quick, and a cheap option for people working on the Plaza or shopping. It also is good advertising for our two businesses.”

Minsky’s Pizza opened in 1976. There are now 15 locations: Lawrence, Leawood, Lenexa, Olathe, Prairie Village, Shawnee, Blue Springs, the City Market, Independence, Lee’s Summit, Liberty, Raymore, south of the Plaza and two in the Northland.

Eggtc. a breakfast and lunch operation, opened in 2006 at 5107 Main St. and later opened a Shawnee location at 7182 Renner Road.

The owners of Night & Day Gourmet haven’t decided on hours yet, but they plan to start by opening at 7:30 a.m. daily.
