Firehouse Subs & Spin Neapolitan Pizza to open in Overland Park’s Corbin Park

Overland Park’s Corbin Park is getting two more restaurants.

Chris and Tara Ruff, owners of the Firehouse Subs in Olathe Station, 15137 W. 119th St., Olathe, plan to open one of the restaurants at 13713 Metcalf Ave. by July. The space formerly housed Bruegger’s Bagels.

Chris Ruff was on tour in Afghanistan with B Co., 7-158th GSAB, when the couple opened their Olathe Station location in March 2011.

“He’ll be here for this one, and two kids later,” said Tara Ruff.

Firehouse Subs specializes in hot and cold sandwiches — corned beef brisket, grilled chicken, chicken salad, veggie, Virginia honey ham and more. There are currently nine area Firehouse Subs in Blue Springs, Kansas City, Liberty, Overland Park and Shawnee, along with one in Lawrence.

It’s official. Spin Neapolitan Pizza wouldn’t confirm its Corbin Park location back in December, when it was still in negotiations. But now a deal has been completed for a 3,800-square-foot restaurant at 6510 W. 135th St. A spring 2015 opening is scheduled. The restaurant, which will be the company’s seventh in the metro, will have an entrance that will face Scheels and an outdoor patio.
