Six months after confirming plans to enter the Kansas City market, Pizzeria Locale will open the doors to its new Waldo restaurant Wednesday.
The location — at 505 W. 75th St. — is the first outside the company’s home state of Colorado.
In May 2013, the first Pizzeria Locale under a new partnership with Chipotle opened in Denver as a fast-casual spinoff of the full-service Boulder restaurant. Another Denver location opened in late 2014.
Pizzeria Locale is “inspired by the traditions of the classic pizzerias of Naples, Italy,” the company said.
The Waldo location will offer 10 specialty pizzas including the Mais (mozzarella, crème fraîche, ham, corn and garlic oil), the Crudo (sauce, mozzarella, prosciutto and arugula) and the Bianca (mozzarella, sausage, broccolini, garlic oil and chili flakes), as well as such standards as pepperoni, veggie and supreme. Prices range from $5.75 to $8.25.
Customers also can build their own pizzas from a variety of toppings and the pizzas can be made with a gluten-free crust.
The pizzas are fired in a custom-designed, high-temperature pizza oven that has them ready to serve in a few minutes.
Pizzeria Locale also offers sides like meatballs and freshly sliced prosciutto, several entree and side salads served with focaccia, and a butterscotch pudding with chocolate and caramel topping called a Budino for $1.50. It has local craft beers, wine on tap, San Pellegrino sodas, milk and juice. Alchemy Coffee & Bake House, Lawrence, created an 8-ounce cold brew bottle specially for Pizzeria Locale.
Pizzeria Locale also plans to open a location in Overland Park’s Corbin Park in late April 2016. Oak Park Mall also would like the company to open a restaurant in a new freestanding, multi-tenant building it plans at the corner of 95th and Quivira, but no lease has been signed. A location also is planned for Cincinnati, Ohio.
The new Waldo restaurant will be open from 11 a.m. to 10 p.m. daily. It seats 32 people in its dining area and 18 on the patio.
It has 27 employees.
