Ted's Cafe Escondido plans to open March 30 in Overland Park’s Corbin Park.

The Mexican restaurant is in a new 7,980-square-foot, free-standing building at 7001 W. 135th St. near Sprouts Farmers Market.

Ted's, which has eight locations in Oklahoma, concentrates on fresh ingredients and made-from scratch items like tamales, slow-marinated (for 72 hours) fajitas, pork chili verde, and chicken Monterey.

It plans to open restaurants in Lee’s Summit and Liberty later this year and also is looking at additional sites in the metro.
