Leawood’s Foo’s Fabulous Frozen Custard is changing to Foo’s Fabulous Cafe.

Joe “Foo” Bremser opened Foo’s Fabulous Frozen Custard in Brookside in 1988 and later sold it to his sister, Betty Bremser, who continues to operate that location.

Not Just Foolin’ LLC became the first franchisee, opening a location in Ranchmart North a decade ago, but expanding the menu beyond frozen custard.

The location, 9421 Mission Road, now serves Roasterie and Oddly Correct coffee, Christopher Elbow Chocolates and pastries from Le Monde Bakery, as well as its popular naan breakfast sandwich with a fried egg, choice of bacon or sausage and choice of cheese, toasted on a panini press.

Under the rebranding, it is adding biscuits and gravy, Belgian waffles and more sandwiches, including a pork belly banh mi, Cubano, Philly Cheesesteak and six-inch subs, along with an Asian Chop Salad.

The new name will highlight its expanded offerings, said Jeff Stottle, managing member of Not Just Foolin’ LLC.

Foo’s Fabulous Cafe will have a grand reopening ceremony at 4:30 p.m. Nov. 9 and the new menu items with debut Thursday.

Not Just Foolin’ LLC plans to expand with another cafe location in Johnson County.
