Blanc Bison Burger

Serves six

Peppadew jam:

  • 1 14-oz. can of whole peppadew, strained
  • 2 Tbs. white cane sugar
  • 6 eggs
  • 6 slices pepper jack cheese
  • 6 thin slices of red onion
  • 6 oz. mayonnaise
  • 6 leaves of butter lettuce, rinsed and dried
  • 6 brioche buns, sliced
  • 6 6-oz. bison patties

For the jam: Place strained peppadew and sugar in a small sauce pan and bring to slowboil. Reduce heat and let mixture reduce while breaking up peppadew with a small wire wisk. Remove from heat and let cool, store in a sealed container and refrigerate.

For the burger: Cook six bison patties to desired temperature. Lightly toast brioche buns and dress with mayonnaise, pepper jack cheese, red onion and butter lettuce. Top with fried egg cooked to your desire, and spoon 2 oz. of peppadew jam on top of egg. Place brioche bun top on the top and feast.
