Olathe updates: Blaze Fast-Fire’d Pizza coming, Chuy’s opens

Blaze Pizza, a leader in the fast-casual pizza industry, wants to open in Olathe.

No opening date was available for the restaurant, at 11991 S. Blackbob Road.

Blaze Pizza restaurants feature an interactive open-kitchen format that allows customers to customize their orders.

It offers signature pizzas as well as-build-your-own for around $8. It uses high-quality ingredients and its made-from-scratch dough has a 24-hour fermentation period. It also offers gluten-free dough and vegan cheese.

The pizzas are “fast-fire-d” and ready to eat in just minutes.

Signature pizzas include the White Top (white cream sauce with mozzarella, applewood bacon, chopped garlic, oregano and arugula), and the BBQ Chkn (grilled chicken, mozzarella, red onion, banana peppers and gorgonzola with barbecue sauce drizzle).

Build-your-own toppings include artichokes, jalapenos, olives, sauteed onion, crumbled meatballs, smoked ham, ovalini mozzarella and ricotta.

Blaze was just named the No. 1 restaurant in Fast Casual’s “2017 Top 100 Movers & Shakers” list. According to Fast Casual, Blaze has gone from two units doing $3 million in 2012 to 175 locations reporting $185 million in sales in 2016. It signed a multiyear endorsement deal with NBA All-Star LeBron James, who also is an investor. It opened 70 restaurants in 2016 and plans to open 80 in 2017.

Chuy’s opens

Chuy’s, an Austin-based Tex-Mex restaurant chain, opened May 31 at 11965 S. Strang Line Road in Olathe.

It is the company’s first Kansas location. It also has a location on the Country Club Plaza that opened in October 2013.

The menu includes 10 made-from-scratch signature sauces and hand-rolled tortillas made fresh throughout the day on a traditional comal griddle in the dining room.

On weekdays from 4 to 7 p.m., it offers happy hour drink specials and its Fully-Loaded Nacho Car, a build-your-own-nachos station with free chips, salsa, queso, ground sirloin and more, served from the trunk of a classic car.

The decor features Chuy’s custom Elvis shrine and hubcap-covered ceiling.

Chuy’s opened on the site of the former Joe’s Crab Shack.
