Making a from-scratch pasta sauce doesn’t need to take hours.
This cream cheese-based sauce is made with ingredients you likely already have on hand and comes together in less than 20 minutes.
Toss it with your favorite pasta, some leftover chicken, roasted vegetables and Parmesan cheese for a quick weeknight dinner.
Quick Cream Cheese Pasta Sauce
Makes enough sauce to generously coat one pound of cooked pasta
1 tablespoon olive oil
2 cloves of garlic, minced
2 ripe tomatoes, chopped
1/2 cup cream cheese
1/2 cup milk
1/2 cup water
1 tablespoon cornstarch
Salt and pepper to taste
1 lemon, juiced
In a large nonstick skillet, heat olive oil over high heat. Add the garlic and cook stirring constantly until the garlic is toasted and lightly browned. Immediately add the diced tomatoes and cook stirring for another minute.
Reduce the heat to medium and whisk in the cream cheese and milk. Mix the cornstarch into the water to form a slurry and then add it to the skillet.
Whisk the sauce until it’s smooth and allow to simmer over low to medium heat for about five minutes.
Season the sauce with salt and pepper and finish with fresh lemon juice.
Immediately serve the sauce with your favorite cooked pasta noodle.
