This is a great recipe to dress up oatmeal on a lazy weekend morning. It’s also a great way to use up some leftover canned pumpkin you might have on hand after some holiday baking.
Quick Harvest Oatmeal

1 1/2 cups water
1/2 cup half-and-half
Pinch of salt
1 cup oatmeal (regular rolled oats)
1/2 cup canned pumpkin
Pinch of cinnamon
2 Tablespoons honey
1 apple, cored and cut into bite size pieces
1/4 cup pecans, finely chopped
In a small sauce pot, bring water, half-and-half and salt to a boil. Add oatmeal and cook for about 5-7 minutes, or until the mixture thickens.
Remove the oatmeal from the stove top and add the pumpkin, cinnamon and honey. Stir with a wooden spoon to thoroughly mix and then place the pot back on the stove over low heat. Cook the oatmeal, stirring until heated through again, approximately one minute.
Divide the oatmeal between four bowls. Top each bowl with diced apple and chopped pecans and serve immediately.
