Keeping it simple is always the best way to go during the summer.
The extended daylight hours lend to pack the summertime full of activities and vacations. This obvious decision leaves little room for time to cook elaborate meals.
Now is the time for quick, clean and cool foods to satisfy and rehydrate from daily activities. The Farmer’s Salad is the easiest way to encompass summer in a bowl. The produce is looking marvelous with bright reds and yellows of the tomatoes and variations of peppers.
Make ahead right after the farmer’s market and you will have a treat all week long.Farmer’s Salad Makes 6 servings 2 tablespoons apple cider vinegar 2 tablespoons olive oil 1 teaspoon chili powder 1 cup goats milk yogurt 2-3 large tomatoes, medium diced 2 cucumbers, medium diced 1/2 cup of sweet onion shaved 1 sweet pepper sliced
To prepare salad:
Whisk together the apple cider vinegar, olive oil, chile powder and yogurt, set aside. Mix together the tomatoes, cucumbers, onions and sweet peppers. Pour yogurt mixture over the tomato mixture. Fold ingredients together season with salt and pepper.
Add watermelon at its peak season, around Labor Day, and maybe garnish with chopped mint or cilantro.
