Here’s a bite of good news for Lawrence fans of Potbelly Sandwich Shop, a Chicago-based chain known for made-to-order toasted sandwiches: Potbelly is now open at 1618 W. 23rd St.
The sandwich shop, which occupies the former Dunn Brothers Coffee shop, serves specialties such as A Wreck, a sandwich stacked with salami, roast beef, turkey, ham and Swiss cheese. The menu also features salads such as the Farmhouse, a bed of greens topped with grilled chicken, hard-boiled egg, bacon, blue cheese, tomatoes, red onion and cucumber.
I’m a fan of Potbelly’s soup (the broccoli cheddar is a favorite) and chili, as well as the hand-dipped shakes (the Oreo is amazing).
Since Potbelly opened its first location in Chicago in 1996, the chain has expanded to 400 locations across the country. The chain entered the Kansas City market in 2013 when it opened a Country Club Plaza location.
The Lawrence location is decorated with mismatched tables, retro lamps, a potbelly stove and photos of Kansas greats such as Amelia Earhart, Paul Rudd and James Naismith.
Potbelly isn’t the only chain expanding to Lawrence in 2017. Zaxby’s, a Southern chicken chain known for fingers, wings and sandwiches, is under construction at 4661 Bauer Farm Drive. Slim Chickens, also known for its chicken tenders, is renovating a former KFC nearby at 701 Wakarusa Drive. Slim Chickens also makes a mean Chicken & Waffles.
