Since I began this job, I've earned my Sommelier certificate and completed the rigorous Basic Food Preparation class in the Culinary Arts program at Johnson County Community College. I regularly participate in wine-tastings, cooking classes and visiting-chef dinners.

That experience and education come to bear when I review a restaurant. I follow the same criteria, whether I'm in a cinderblock lunch joint or a swanly suburban restaurant that has been lauded in Esquire or Bon Appetit: Are the ingredients fresh? Are the cooking techniques on the mark? Do the flavors work together or is there a promiscuous use of ingredients? How's the presentation? Is the meal worth the price?

I critique service from the first hello to the thank-yous and good-nights. I work anonymously about 90 percent of the time, so my experiences should be typical of any diner's. I, too, have pet peeves: restaurants that are too cold or loud, servers who dismiss a complaint or disappear after dessert, lousy coffee, overpriced wine.

I write for the consumer, as a consumer on a budget. I try to crisscross the Kansas City area, reviewing a variety of restaurants. Whether I'm eating authentic French cuisine or sloppy Kansas City barbecue, I measure quality and integrity. I look for intangibles, for a sense that the chef cares about the food and takes pride in what comes out of the kitchen.

Food is about more than sustenance. It is about culture and customs. Ultimately, though, my love for food goes back to something more personal and far less remote: to a connection I made more than 30 years ago standing in the dirt on my family's farm.

A: No one has been able to find him. Phone disconnected, etc. SEveral have tried. I hope he's okay.

Q: We dined at Ixtapa recently and boy was I disappointed. We've been eating there about once a year and I had been reading the reviews and getting hungry for it again. It was totally ordinary, just like any other mexican restaurant. There was nothing special at all about the food or the service. On the plus side, we found a chinese restaurant up north (Jade Garden) which we think is way better than most around here. The last time we were at Bo Lings (zona rosa) the waitress said, "I used to like chinese food before I started working here." That's not what you want to hear. Anyway, it wasn't anything special at all either. What's wrong with Kansas City? It's almost impossible to find a good restaurant.

A: I haven't been there in about three years. I liked it then and had heard good things since. I'm sorry to hear the place isn't what you remembered. Was the owner there when you were? He was part of the charm, as I remember. But he does have two places - or at least used to. And that's disheartening news about Bo Lings. I like Pine and Bamboo Garden on SM Parkway. Check it out.

Q: Did you get my question about Napoleon's closing? Also, there was a new business license issued on October 9 for a Napoleon's Cafe at the same address.

Q: Have you ever done a review of the Wheel Inn Restaurant in Sedalia, MO? Just before they closed, I made the journey to have one last Goober Burger. They were quite busy and I waited an hour along with other fans of this delectable hamburger with peanut butter. Much to my surprise I made a trip to the Lake of the Ozarks and as I was driving south on 65 HWY I spotted the new location just across from the Fairgrounds Grandstand. I wish I had known they had reopened at a new location. I would have planned my trip through Sedalia for lunch or maybe dinner rather than breakfast. The Wheel Inn restaurant is a legend! Make it a daytrip to see the Bothwell Lodge and a Goober Burger from the Wheel Inn Restaurant!

A: I've often driven by it on the way to soccer tournaments. but the one time I stopped by, I learned they had a cash-only policy and all I had was plastic. So, no goober burgers yet. Now that I know they're open in a different locale,maybe I'll finally get to try one.

Q: A River Market restaurant was reviewed very favorably on either Sept. 4th or 5th. Please assist me in remembering its name. We want to go there this Friday. Thanks. Karren

Q: I recall having read in the Star that the former Stevensons Apple Farm Restaurant was reopening some where in the metro area. Please let me know when & where this is happening,I have family in from out of state & they really would like to eat there if it has already opened.

A: Yes it is. It's called J.L. Stephenson's Santa Fe Inn, 6600 Blue Ridge Blvd., Raytown. Open 11 a.m. to 9 p.m. daily. Enjoy.

Q: back to the Delaware Cafe....i have had almost everything on the new menu...the olive appetizer is one of the best deals in town, too, for 4 bucks . 2 or 3 people could easily share it...I have had brunch there ( brunch only on Saturdays) and it was delicious and extremely affordable..great outdoor patio, good cocktails, ( the lavender lemonade was delicious! ) very nice wine offerings, the gazpacho i had there last week was one of the most unique,and refreshing gazpachos I have ever had...(made with melon!)

Q: have you been to the new Delaware Cafe at 300 Delaware? I have been there several times, love the food, the renovation of the space is beautiful, and chef Joe West is doing a great job...i think it is interesting that all the new owners are young, and the place is wonderful ...the five dollar burger and homemade fries on Tuesday happy hour is one of the best deals in town...I'm hooked! good place to have a beer and watch a game, too....

A: I've been for a Good and Cheap lunch. I'm anxious to get their for dinner as the menu looks lovely. And the chef has worked with some of the best in town. What else have you had besides burger and fries?

Q: A nephew and wife from Nashville are coming to visit soon. He says he wants to go to "Momma's" because he heard they had good omelets. Do you know what he's talking about? I sure don't.

A: I'm thinking either Mama's 39th St. Diner in the formers Nichols Lunch spot (39th St and Southwest Trafficway) or Big Momma's in Grandview. But I"m thinking the former. GEt the hash; it's amazing - and homemade. The number for Mama's is 531-6422. Enjoy

Q: A few weeks ago you reviewed a Cambodian restaurant. I don't remember the name, but I thought I remembered where is was, over in Shawnee, I believe. Last weekend I tried to find it and couldn't. Can you please give the name and location again? Thanks.

A: It is Phnom Penh, of course, off of Independence Boulevard, almost to 435. It's has an Independence Boulevard address, although the front door is on a side street, across from a grocery store.

Q: Actually, Frankie & Johnnie's may be in Raymore - on the East side of 71 Highway, South of 58 Highway. An excellent place to drink and dine - kind of a sports bar and restaurant, serving everything from burgers to salmon. Someone told me you reviewed them, but I must have missed it. Thanks again!

A: No, Haven't been there. Although it sounds like a fun place to hit before or after soccer tournaments.

Q: I am tryiing to locate the Mexican resturant that you wrote about on Thursday, July 31,2008. Can not remember the name or exact location. Somewhere in Westport, I think. Thanks

A: I didn't come up with anything in our library but I"ll check my clips. I have written about Los Alamos Market, 1667 Summit, and El Rancho Mexican, 534 Westport Rd. this summer. And I've got a blurb scheduled to run Thursday on Cantina del Ray, in the former Swizzle space in Waldo.

Q: On June 28th, my wife, friends, and I ate at the American Restaurant KC. The food was good, the service great, and the atmosphere very chilly -- downright cold! I sent them an e-mail upon our return to St. Louis and have heard nary a word from them. Is this typical of how they treat honest comments? Sincerely, Pete

A: Hmmm. Chilly - as in haughty? Not good. I know they are going through significant changes. Chef Celina Tio has left and former American Restaurant chef Debbie Gold has taken over. I'd suggest sending a second letter to Debbie's attention as well as one to Linda Goodfellow. The first one may have been lost in the cracks.

Q: Someone told me that you did a review on Frankie & Johnnie's in Belton - where can I get a copy of that?? Thanks so much.

A: Check any local ethnic restaurants. And surely epicurious.com has a pig snoot recipe.

Q: I see that you are holding the City Tavern menu up in your photo. My wife and I just went there last night and were very underwhelmed. The food was subpar and in fact poorly described by our surly waitress. The staff had that attitude of a group that didn't want to be there, could barely tolerate you, and was awaiting the restraunts closing. If it had cost half as much I would put up with it but of course it didn't and I won't go back. Do you have any suggestions on other seafood restraunts you have enjoyed lately.

A: Probably time to update that photo; it was shot probably 6 or 7 years ago. I keep hoping City Tavern will turn around but not much good news out of there in awhile. For seafood, though, consider the Bristol - in Leawood or Power and Light; Bonefish Grill - quite good actually. I had great escolar, wild salmon and scallops at PotPie, lovely bouillabaise and halibut at bluestem. Le Fou Frog always serves lots of fish, including John Dory and bouillbaisse.

Q: When you say "eat local", are you saying eat only at non-franchise restaurants? I used to own two Subway franchises & consider myself local.

A: The goal would be to try. That being said, after an 18 mile bike ride two nights ago, I ate a McDonald's cheeseburger and fries. I was needing salt... And I'm speaking mostly of the big, not locally-franchised places. As we all know, it's more complicated than the slogans make it seem.

Q: Dear Lauren, After reading your April, 2007 review of Swizzle Bistro my wife and I decided to give it a try. We were as thrilled as you were with chef Ryan Torpey's creations. I believe you said, "Ryan Torpey is the best chef you ve never heard of...". Both my wife and I agree and have been raving to our friends about his menu ever since. We were both saddened to hear that just last week, Swizzle decided to close down. I am not sure which lucky restuarant around town has snatched up Ryan Torpey, but could you please tell us where he lands when you find out? Thank you again for your review! Regards, Preston H.

A: They called last week to give me a heads up about closing. Lots of local places are hurting - a combination of the economy and the Power and Light District effect. Eat local when you dine out. And the Swizzle folks said they'd let me know where Ryan lands. He's a real talent.

Q: Hi Lauren! I just wanted to be the first to let you know about our move. We are closing the midtown COPA ROOM on Saturday the 28th of June. We will then RE-OPEN the COPA ROOM at our new Lenexa location (87th and Lackman) in August. We will be celebrating closing all week with the final blast on Saturday night. If you are out and about stop by! I am going to have all my entertainers in putting on one heck of a show! While we are closed for a month and a half my Mom will be working on some new menu items. So our grand opening should be something to mark on your calendar. I will keep you updated! If you have any questions just give me a ring! Carlo
