Arkansas-based Slim Chickens coming to Kansas City

Slim Chickens, Fayetteville, Ark., is in expansion mode and is targeting the Kansas City metro.

The company has signed an area franchisee for six area locations with the first restaurant scheduled to open by November.

Slim Chickens was founded in 2003 and a year ago a longtime employee opened the company’s first franchised location in Little Rock.

The fast-casual restaurants focus on fresh, made-to-order chicken tenders, wings, salads, sandwiches and wraps.

The company has eight corporate-owned locations in Arkansas and Oklahoma, and five franchisee locations in Arkansas and Texas. Restaurants also are under development in Des Moines, Lincoln and Omaha, as well as in northwestern Louisiana and Texas.

“It’s a great way to rapidly develop our brand, to get a national footprint,” said Sam Rothschild, chief operating officer of Slim Chickens. Rothschild lived in the Kansas City area for eight years and had served as vice president of operations for Applebee’s.

The area Slim Chickens franchisee is currently scouting locations. The restaurants are about 3,000-square-feet, either freestanding locations or on an endcap of a shopping center that would allow for a drive-through.

They typically have about 30 employees per location.
