Last week, I shared a recipe for basil pesto made with hemp seeds, a superfood high in protein and healthy fats.
The salad is like a garden in bowl, with fresh tomatoes, red bell pepper, dill, cucumber and corn. Adding protein-rich hemp seeds make this fresh salad even more satisfying.
The salad tastes great on its own, but I also enjoy it salsa-style with blue corn tortilla chips.
