Jimmy Lynch is so sold on Park Place he will soon have three restaurants in the Leawood center.
Lynch opened an 801 Chophouse there in late 2011. He plans to open an 801 Fish in Park Place in late 2012 or early 2013. Now he also has finalized a lease for Pig Finch, a gastropub set to open in the former Trezo Vino spot at 11570 Ash St. in mid-October.
“The demographics in Leawood are phenomenal,” Lynch said. “We like the customers, and the customers like us.”
Lynch, who is based in Des Moines, Iowa, said Pig Finch will offer such items as pork belly chicharrones, duck breast cassoulet, baked mussels, stout-marinated hanger steak with sweet potato dumplings, and sausage with lyonnaise potatoes.
The Pig Finch name plays homage to Iowa’s pig production and state bird.
The former Trezo Vino space also will be remodeled for a “New York City, Soho gastropub” feel.
It will have a “much more friendly, casual atmosphere — food, craft beer, wine, affordably priced,” Lynch said.
Lynch plans more Pig Finch locations. Although the Leawood 801 Fish is set to open first, he also plans to open 801 Fish restaurants in Des Moines and Omaha. He also has an 801 Chophouse in the Power Light District.Quick bites
