TODAY

Thanks to “Search for the Amazon Headshrinkers” (8 p.m., National Geographic Channel), I no longer have to wonder what a recently deceased human head looks like as it is actually … being … shrunk. If you have trouble sleeping at night, don’t say you weren’t warned. The program kicks off Nat Geo’s annual grab bag of sensational programming, “Expedition Week,” which will include shark hunts, sunken-treasure dives, Jesus archaeology and Mars exploration at 8 each night.

MONDAY

“Chef Academy” (10 p.m., Bravo) is the latest addition to a subgenre we might call “reality-TV-created business shows.” Jean-Christophe Novelli, aka the World’s Sexiest Chef, has had his eye on starting an American branch of his acclaimed U.K. Novelli Academy. And so, as on previous shows like “The Restaurant” and “LA Ink,” this new venture is launched in front of the cameras. Novelli ties the academy’s fate, somewhat improbably, to the performance of his nine charter students. The first episode exposes the huge gulf between their skills and his, setting up the tension for what’s to follow.

WEDNESDAY

I hate to keep tantalizing you with “Friday Night Lights” storylines, but some of my sources say NBC isn’t planning to start airing Season 4 until next summer. In tonight’s episode, airing at 8 on the 101 — an exclusive offering of DirecTV — Coach Taylor (Kyle Chandler) struggles to get the beaten-down East Dillon alumni to support a pep rally.

THURSDAY

•“Terror in Mumbai” (7 p.m., HBO) revisits the brazen terror attack on a luxury hotel in the Indian port city by 10 Pakistani men, who arrived on a small hijacked fishing boat. Fareed Zakaria narrates; look for my story in Thursday’s Preview.

• Last week’s town hall meeting involving the people who created and appeared in “CityBall” — the Emmy-winning documentary about inner city athletics in Kansas City — will air at 8:30 p.m. on Metro Sports following an encore broadcast of the film at 7.
